Founded by Pierre Tilquin in early 2009, Gueuzerie Tilquinis a blendery in Bierghes, a borough of Rebecq located approximately 30 kilometers south-west of Brussels. Tilquin is the only lambic blendery in the mainly French-speaking, southern region of Wallonia. It opened its doors to the public in the summer of 2011. Prior to Tilquin'sconception, Pierre spent 6 months working and developing a professional relationship with Jean Van Roy of BrasserieCantillon. It is important to note, not all lambic producers
brew wort, it's very common for them to source wort from the ones that do. Pierre sources wort from Boon, Lindemans, Girardin and Cantillon. Cantillon sells wort toPierre and only Pierre.
Lambic is something we are very passionate about here atWebb's City Cellar. A style we will never be able to produce but when we pour it, we treat it like it's our own. To expand our knowledge, we invited Pierre to come andspeak at our annual beer festival, Foeder For Thought. Giving the audience an opportunity to hear from one of the best while trying some of his beverages that had previously never been in the state of Florida.
